Frequently Asked Questions

Multiply active dry by 0.75 to get instant yeast. For 2 tsp active dry, use 1½ tsp instant. Instant yeast is more potent per gram — 25% less produces the same leavening.

Fresh yeast = Active dry × 2.5, or Instant × 3.0. For 7g active dry (1 packet), use 17.5g fresh yeast. Fresh yeast has ~70% water content — it's less concentrated per gram. Crumble it into warm water before adding to your recipe.

Traditionally yes: dissolve in warm water (35–43°C) with a pinch of sugar for 5–10 minutes until foamy. Modern active dry yeast has finer granules and often works without proofing, but proofing confirms it's alive. Instant yeast never needs proofing.

Active dry yeast: 35–43°C (95–110°F). Fresh yeast: same range. Instant yeast: works in cold to warm liquid (even cold water for no-knead bread). Temperatures above 49°C (120°F) kill yeast. Below 10°C yeast becomes dormant but does not die — this is why cold retarding in the fridge works for slow fermentation.

Yeast Conversion Ratios

All conversions are based on the standard leavening equivalency (by weight in grams):

  • 1g Active Dry = 0.75g Instant = 2.5g Fresh
  • 1 standard packet (US) = 7g active dry = 5.25g instant = 17.5g fresh
  • 1 tsp active dry ≈ 2.8g; 1 tsp instant ≈ 3.1g (denser particles)
